We hope that everyone had a filling Thanksgiving!  Our family farm is smoking one of our turkeys today (Friday) after spending a wonderful day in Fairfax with family on Thursday just because we wanted to try it out.
 
We WILL be open on Saturday from 10-3.
 
We have 4 fresh turkeys left which will be on sale for $3.99/pound (from the regular $5.99/pound) and we will be happy to add a second bag around it so you can freeze it!  The turkeys are all in the 18lb range.
 
Fresh chicken is available as well for only $3.99/lb.
 
Some great news - we will be opening up sales of our LAST 2 steers for the year this weekend.  We weren't planning on selling them, but decided we could since we are not at the farmer's market for awhile.  We only have 2 and we do expect these to go fast!!
 
 
We do still have lamb and goat meat available on the farm - come and stock up!  We won't have any more lambs going to the butcher until next year so when we run out...... that's it!
 
A new thing we got this week - WILD OYSTER MUSHROOMS!  Picked from our farm by our son and a friend who showed him what they are.  These sell in local grocery stores for up to $12/pound - these were picked this week and are only $7.99/pound!
 
Here's a recipe of what to do with them:

Oyster Baked Rice

Oyster mushrooms will transform plain brown rice into one of the best dishes you’ve ever tasted.
3-3/4 cups water
1/4 cup olive oil
3 cups oyster mushrooms or other mushrooms, sliced
3 cup ramp (wild leek) leaves or scallions, chopped
2 celery stalks, sliced
4 cloves of garlic, chopped
1-3/4 cups basmati brown rice or long-grain rice
1/4 cup wild rice
1/4 cup amaranth
1 tbs. Bragg’s liquid aminos or tamari soy sauce
2 tsp. chili powder
1 tsp. marjoram, ground
1 tsp. dried spearmint, ground
1. Sauté the mushrooms, ramps, celery, and garlic in the olive oil 10 minutes.
2. Combine with the remaining ingredients in an oiled casserole dish and bake, covered, in a preheated 375°F oven 90 minutes or until all the liquid has been absorbed.
Makes 7 cups
Preparation Time: 30
Cooking Time: 90 minutes

What a day - we finally get to just sit. Yesterday was our last round of turkeys and we truly hope that everyone enjoys them!! We get to enjoy ours tomorrow when I set up the smoker and try smoking one (I've never done it).

Butchering the turkeys was truly a family event. Unlike the chickens where I can do 10-20 myself in about 1 hour (not including the time the water takes to heat up) - turkeys take awhile. We did our best getting ALL the feathers off - but this is a challenge. All the kids helped out with this and worked with us, creating memories to last for years to come (though I doubt they see it like that right now). Some of the best parts were the kids saying, "This turkey just looks YUMMY - I'm hungry now!" to Joe spraying us with VERY COLD water at the end to remind us we were almost done.

We will be doing the last 13 turkeys for Christmas this year and 1 will get to be ours. What a fun time this has been!!

Then Jacob got to go "mushroom hunting" with a family friend and came back with a treasure of Wild Oyster Mushrooms! I found a cool website: http://www.wildmanstevebrill.com/ which seems to have some great recipes for these local treats. I think I'm adding the mushroom rice recipe to our Thanksgiving meal today!

This is the LAST time (I promise) I will be emailing you about the Thanksgiving Turkeys - but I figured with the phone calls I have gotten I will send out a reminder.
 
Tomorrow, Wednesday, from 1-5 Chicama Run will be open!  Even if you did NOT reserve a fresh turkey, we will have extras available for you that we are butchering in the morning.
 
Price for the turkeys is $5.99 per pound and the sizes have been ranging from 13-22 lbs.

While you are here, we will have eggs, beef, lamb, pork, goat and fresh chicken as well!

Hi everyone!
 
Our whole family will be working this morning to continue butchering turkeys for your Thanksgiving dinner!
 
We have been having a few 15lb turkeys - but most have been in the 16-21 pound range.
 
We WILL be open once again on Sunday from 3-6 and then again on Wednesday from 1-7 for turkey pick up!
 
I suggest coming early on Sunday or Wednesday for the best selection.
 
We will have our full compliment of beef, pork, lamb & goat meat available as well.  A few chickens are still left from yesterday as well!!
 
Turkeys are $5.99/pound and are FRESH!

WE ARE OPEN SATURDAY FROM 10-3
 
The rush for Thanksgiving starts today when I start butchering chickens and turkeys for people this week.  This will be both exciting and exhausting since it is my first year doing it AND the first time I have done butchering day after day.
 
SO - what does this mean for you??
 
Even if you were on the fence for a fresh turkey this year and now you think you might like to get one - YOU CAN!  Saturday we will have extra turkeys available for you to pick up - they are $5.99 and I expect to have a few smaller ones in the group - so we'll guess right now 12-25 lbs.  Come early if you want them!!
 
Fresh chicken will be available as well at the new lower price of $3.99/pound!
 
Eggs are PLENTIFUL this week! Stock up early for your baking needs for the week.
 
On Thursday we picked up our lambs for the season.  This meat will DEFINITELY go fast so be sure to get your roasts early - even think ahead for Holiday dinners!
 
For lamb we have:
 
Boneless Leg of Lamb - $20/pound
Bone-In Leg of Lamb - $18/pound
Lamb Chops & Lamb Loin Chops - $15/pound
Classic Sage Lamb Sausage - $10/pound
Lamb Kabob Meat - $12/pound
Lamb Stew Meat - $12/pound
 
The lamb is sure to go fast since we only had 8 lambs go in this season!
 
We will also have goat meat available on the farm on Saturday, however at this time I have not had a chance to look at it and price it.  Expect it to be higher than the lamb - and again, it will go fast since we only had 3 goats this season.
 
Once again - BEEF, PORK & MUTTON will be 10% off all retail pricing when picked up at the farm this Saturday.

Good morning everyone!
 
I try not to email this often, but we only have 3 - 1/4's left for 2009 of our freezer beef!!  We have 2 Choice B (Boneless Steaks) and 1 Choice A (Bone-In Steaks).
 
Once these are sold, this will be it for the season so make sure you get your order in as soon as possible!!
 
 
This week is THE LAST WEEK if you want a whole lamb!  They go to the butcher this Friday.

Hi everyone!
 
After having fun dressing up for Halloween and seeing everyone's cool costumes and all the trick or treating is done..... WE STILL HAVE SOME CHICKENS LEFT!!
 
So here's the deal....
 
This week Sunday evening (after 4:30) and on Monday.... you can come and pick up chickens for $4.00/pound instead of the usual $4.50/pound. 
 
They are still really fresh since I didn't get to butcher them until late Friday afternoon and they WILL KEEP for at least a week in the fridge.
 
But we are limited and the sale will be until these are gone.
 
Email me if you want me to hold some for you - BUT it will be on a first come/first serve basis.
 
Thank you everyone for making our first Trick or Treat weekend a success!  The weather held out until the last minute and we had a lot of fun seeing everyone dressed up. 
 
Then - mark your calanders.... starting this Saturday we will be open on the FARM ONLY (we are no longer at the Leesburg Market for the winter season) from 10-3.  With daylight savings time ending we have changed the times.  Watch for updated times Thanksgiving week as I am butchering the turkeys for everyone and we do not know if we will be open that weekend.
